This is a delicious and easy make-ahead meal that is full of complex flavors and things you probably already have on hand in your pantry or fridge.
My daughter loves these and my husband asks for them often. Once you’ve made it once, it is not that hard to modify or make your own by adding different veggies that your family loves. We personally love broccoli.
This is a modified recipe from the Food Network’s star and blogger Aarti Sequeira.
One staple in my recipe is garlic-ginger paste. Super easy. Put equal parts ginger and garlic (I use about 1/2 cup each) in your food processor, pulse until combined and then add a little Olive Oil to make into a paste. Put in a jar, store in the fridge and then add to just about anything to make a delicious flavor.
Ingredients
Meatballs
1 pound grass fed beef
1 jalepeno pepper, seeded and minced (I used a red one from my garden)
1 tablespoon garlic-ginger paste (or 1/2 T each minced ginger, garlic)
2 tablespoon cilantro, minced
Curry Sauce
2 tablespoons coconut oil
1/2 tsp cumin seeds
pinch of cayenne pepper ( or more to taste)
1 tsp roasted coriander
3-4 shallots, thinly sliced
2 tablespoons garlic ginger paste
1 can diced tomatoes, drained of water
1 can full-fat coconut milk
1/2 cup unsweetened flaked coconut
2 cups broccoli florets
Big bunch of chopped cilantro
1 lime

Directions
Preheat oven to 400. Line a baking sheet with foil. Make meatballs by combining beef with pepper, garlic ginger paste and cilantro. Form 1 tablespoon sized meatballs (don’t over-mix). Bake about 5 minutes (they’ll finish in the simmering sauce). Set aside and prepare curry sauce.
Heat the coconut oil in a large pan (that has a fitted lid). Add the cumin seeds and let sizzle for a few seconds. Add the additional spices and then the shallots. Let these cook for a minute or two and then add the tomatoes. Let this mixture cook for a few minutes. Add the coconut flakes. Pour in the coconut milk and then pour water into the coconut milk can (about 1/2 of it) and add the water to the pan.
Stir to make a simmering sauce and add the meatballs. Simmer for about 5-7 minutes and then add the broccoli and cover to steam. I like my broccoli al dente so I only cook it for about 2 minutes.
Sprinkle the lime juice and cilantro and serve! Delicious.
